Coq au Vin (Chicken braised in red wine)

Ingredients:

  • 1 whole chicken, cut into pieces

  • 2 cups red wine

  • 1 onion, chopped

  • 2 carrots, chopped

  • 2 garlic cloves, minced

  • 4 slices bacon, chopped

  • 1 cup mushrooms, sliced

  • Salt and pepper to taste

Instructions:

  1. Cook bacon in a pan until crispy, set aside.

  2. Brown chicken in bacon fat, remove.

  3. Sauté onions, carrots, garlic, and mushrooms.

  4. Return chicken, add wine, and simmer for 45 minutes.

  5. Serve with bacon garnish.

Boeuf Bourguignon (Beef stew in red wine)

Ingredients:

  • 2 lbs beef chuck, cubed

  • 2 cups red wine

  • 1 onion, chopped

  • 2 carrots, chopped

  • 2 garlic cloves, minced

  • 4 slices bacon, chopped

  • 1 cup mushrooms, sliced

  • Salt and pepper to taste

Instructions:

  1. Cook bacon, set aside.

  2. Brown beef in bacon fat, remove.

  3. Sauté onions, carrots, garlic, and mushrooms.

  4. Return beef, add wine, and simmer for 2 hours.

  5. Serve hot.
